Four-ingredient ‘Reese’s Cup’

Let’s face it… Reese’s are simply wonderful and delicious, but they’re not the best dessert.  If you love them as much as I do, you’re in luck!  There’s a healthier recipe that’s going to knock your sweet tooth out of the park and it’s only four clean ingredients.  Now that’s sweet. 

INGREDIENTS:

  • 1 cup smooth almond butter
  • 1 tablespoon coconut oil
  • 1 tablespoon honey
  • 1 cup Enjoy Life brand dark chocolate chips

DIRECTIONS:

In a microwave-safe bowl, combine the almond butter, coconut oil, and honey.  Microwave for 20 seconds to melt everything.  Stir the contents.  It should be creamy and easily mixed together.  Thow it back in the microwave for another 10 seconds or so if needed.

Pour the mixture into a mini muffin tin, filling up the cups 3/4 of the way.

Place the chocolate chips in another bowl.  Microwave for 30 seconds at a time, mixing in between until the chips are fully melted.

Top off the almond butter mixture in the pan with the chocolate.

Put the pan in the freezer for about an hour or so until the chocolate on top is fully frozen.

Use a knife to help remove the almond butter cups from the tin.  I like putting them either in Tupperware or a plastic bag and then leave them in the fridge.  You now have a great, handy, mini dessert snack that is full of protein and clean ingredients.
