Baked Avocado & Egg

Need a quick, easy & healthy breakfast? Look no further than this 2 ingredient breakfast! It starts with an avocado and 2 eggs baked at 425 for about 10 – 12 minutes. It tastes great with just the avocado & egg but even better topped with your favorite ingredients.

I topped mine with some fresh tomato and scallions. These vegetables provided a great contrast to the creamy avocado and egg. Feel free to experiment with any of the following toppings:

  • Salsa
  • Fresh, Chopped Tomatoes
  • Crumbled Bacon
  • Cheddar Cheese
  • Hot Sauce
  • Green Onions or Scallions
  • Chopped Fresh Herbs – Parsley, Cilantro or Basil

This is a great option for breakfast as each egg provides 6 grams of protein. If you add the 4 grams of protein from the avocado, that is 16 grams of filling protein to start your day!

  • 1 Ripe Avocado
  • Eggs – 2


Preheat your oven to 425. Using a sharp knife, cut your avocado in half, twist gently and pull apart. Firmly hold the half with the pit in your hand and hit the pit with the knife. While the knife is in the pit, pull up gently to remove the pit from the avocado half.

Crack open your eggs and pour into the avocado. If your egg is a little too big you can either spoon out a little egg white or scoop out a little of the avocado.

Sprinkle each half with a generous amount of salt and pepper. Bake at 425 for about 10 minutes or until the yolk is at the consistency you love.
