Banana & Peanut Butter Bowl

I wish I could say that I came up with this quick breakfast on my own, but I did not. I saw this at a local restaurant and knew that I could make it myself and save the $5. I didn’t have the exact ingredients so I simply used what I had in the pantry. The only thing I had to buy was the bananas because I don’t typically eat them. However, after trying this banana & peanut butter bowl, that has definitely changed.

Start out by slicing your banana into medium sized chunks. I wanted a nice thin drizzle of peanut butter on top of the bananas. This can be a little challenging if you are not using fresh ground peanut butter as it is typically more runny. To solve this problem, I heated up about 1 TBSP. of peanut butter in the microwave for 30 – 45 seconds. Stir heated peanut butter and then drizzle across the top of the banana slices. Yesterday at Harris Teeter, I found this great new peanut butter. It was mostly smooth with just a little crunch that was perfect with the rest of the ingredients.

Next I sprinkled some unsweetened coconut flakes, a little drizzle of honey (you could also use agave nectar), chia seeds and ground flax seed. I was surprised at just how much I enjoyed this for breakfast. It was the perfect balance of sweet & salty and creamy & crunchy. The added protein & fiber kept me full until lunch. 1 – Banana

1 TBSP. Peanut Butter

1 TBSP. Unsweetened Coconut Flakes

1 TBSP. Honey or Agave Nectar

1 TSP. Chia Seeds

1 TSP. Ground Flax Seed
