Red Curry Chicken & Cashews

Cut your boneless chicken in small cubes. Cut up some sweet potato the same way and boil your sweet potato in water until soft, about 13 minutes. Drain and put to the side. In a large sauce pan add a can of coconut milk and add 1-2 TBSP of red curry paste. Whisk the milk and curry paste until combined on medium heat. Then add your raw chicken and cook that in the sauce. You will want a slow boil. About 10 minutes for the chicken to cook as long as your pieces are small. I like to add cayenne or sriracha for spice but you can omit. Once chicken is cooked, throw in some peas, sweet potato and heat through. Add cashews or peanuts right before eating. If you like this sauce you can modify with any veggies you like.
