Greek Yogurt Bowls

All 3 of my boys had basketball practice last night. That means we were at the gym from 5:30  until 8:30 last night. I was a bad Mom and had to buy Wendy’s cheeseburgers for dinner 😦

To try and undo the damage from our on the run dinner last night, I made these Greek Yogurt Bowls for lunch for them today and a late night snack for my husband.

Greek yogurt is a great source of protein, plus it is packed with probiotics, which can help boost your immune system and decrease stomach issues.

Blueberries are packed full of antioxidants, which are essential for the nervous system and brain health. Strawberries are an excellent source of Vitamin C, Manganese and Potassium. Kiwis are a great source of Vitamins C & E…which make them a great choice for a sweet snack!

I am lucky that all 3 of my boys love fruit. They don’t all love the same fruits so I have to switch them out according to their preferences. My husband just loves anything sweet late at night so this worked perfectly.

I had a bunch of leftover pumpkin seeds & sunflower seed from the trail mix I made over the weekend so I decided to add those on top for an extra amount of protein & crunch.

INGREDIENTS

Greek Yogurt – 2 Heaping TBSP. Per Bowl

Blueberries – 1 TBSP. Per Bowl

Strawberries – 1 TBSP. Per Bowl (Diced)

Kiwi – 1 TBSP.Per Bowl (Peeled & Diced)

Sunflower Seeds – 1 TSP. Per Bowl

Pumpkin Seeds – 1 TSP. Per Bowl

DIRECTIONS

Spoon the yogurt into each individual cup. Place the blueberries, strawberries and kiwi on top of the yogurt. Then place the pumpkin & sunflower seeds on top of the fruit. I hope that you enjoy!
