I am always looking for a hearty (savory) breakfast that is packed full of protein. I want something that can pretty much be prepared ahead of time and just thrown together at the last minute as I am scrambling out the door with my 3 boys.
I love eggs and avocado…almost too much! The fill me up and are packed with protein. Did you know that 1 egg has 6.3 grams of protein? Plus, they are an excellent source of Vitamin D, B6, B12, Selenium, Zinc Iron & Copper.
Avocados are amazing! They are a healthy fat that contain Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6 & Vitamin E. I love how creamy and filling they are.
I prepped this dish the night before and chopped the avocado and added it in the morning so it would not turn brown.
INGREDIENTS
2 Hard Boiled Eggs – Peeled & Chopped Into Quarters
1 Avocado – Diced
1/2 Purple Onion – Diced
1/2 Red Bell Pepper – Diced
Salt & Pepper To Taste
DIRECTIONS
Mix everything together but the eggs. Gently fold in the eggs. Sprinkle with salt & pepper. Hope that you enjoy!
