I admit, I have never been to New York. But, this breakfast is everything that I could imagine an authentic New York breakfast tasting like. Hearty rye bread topped with cream cheese, thin slices of salty, buttery smoked salmon, and crunchy vegetables make for the perfect breakfast combination.
On paper, this recipe sounds too decadent to be healthy. In reality though, it is fairly low in calories and packed full of protein and fiber. By swapping out some of the higher calorie and fuller fat ingredients, you are able to keep all the flavor and not feel guilty.
I used thin sliced rye bread instead of a high calorie bagel. Rye bread is typically higher in fiber and slightly stronger in flavor than a plain white bagel. Next, I top the bagel with whipped cream cheese. It has the same calorie and fat content as regular cream cheese, but you only about half the amount of regular cream cheese.
I hope that you enjoy!
INGREDIENTS
- Thin sliced rye or pumpernickel bread
- Whipped cream cheese
- Smoked salmon – pre-sliced
- English cucumber – thin slices
- Diced fresh tomatoes
- Purple onions – diced
- Chopped fresh dill
- Salt & Pepper to taste
DIRECTIONS
Lightly toast the rye bread and top with about 2 tablespoons of whipped cream cheese. Cut 2 slices of smoked salmon and layer the 4 pieces on the bread. Next, place your sliced cucumber, diced tomatoes and purple onions on top of the salmon. Roughly chop the fresh and sprinkle on top of veggies. Top with fresh cracked black pepper and coarse sea salt.
